LITTLE SMOKED SAUSAGE ITALIANO 
8 oz. lite smoked sausage (cut into circles)
2 garlic cloves (minced)
2 c. sliced mushrooms
2 c. coarsely chopped fresh tomatoes
1 1/2 tsp. dried basil or 1/2 c. fresh basil chopped
4 oz. extra thin spaghetti, cooked
2 tbsp. capers, rinsed and drained
Salt and pepper to taste

In a non stick pan, saute sausage, garlic, mushrooms, and basil (2 to 3 minutes). Remove from heat, add tomatoes. Toss tomato mixture, hot pasta and capers. Season to taste. Serve immediately.

Salad Variation:

Add 1/4 c. white wine vinegar. Chill until ready to serve. (Lite recipe.)
