CHEESY BAKED POTATOES 
8-10 potatoes
1 lb. Velveeta cheese
1/2 c. sliced green onions
1/2 c. cooked bacon, crumbled about 8 slices
3 c. Weight Watchers mayonnaise
3-4 slices bacon, crumbled for top, optional

Boil or bake 8-10 potatoes ahead of time. Cool. Cut up into big pieces with skin left on.

In large bowl, place potatoes and 1 pound Velveeta cheese cubed. Add diced green onions, cooked, crumbled bacon. Toss all together with 3 cups Weight Watchers mayonnaise. Place in 9 x 13 inch baking dish. Bake at 325 degrees for 45 minutes. Also, I add 3 or 4 additional slices of bacon crumbled on top.
