FIESTA BEEF 
1 lb. lean ground beef
1/3 c. diced onion
1/2 tsp. garlic powder
2 fresh or 4 canned green chilies, roasted, peeled & diced
1 can (16 oz.) stewed tomatoes with juice
1/2 tsp. salt
3/4 c. water
1 1/2 c. instant rice
2 to 4 oz. shredded cheese

In skillet saute beef, onion and chilies until meat is browned. Add salt, garlic, tomatoes and water. Bring to a boil and stir in rice. Cover and remove from heat, let stand 5 minutes. Add cheese, if desired, let melt and serve. Serves 4 generously.
