UPSIDE-DOWN PINEAPPLE CAKE 
PINEAPPLE TOPPING:

1/4 c. butter
1/2 c. brown sugar
8 oz. pineapple rings
Maraschino cherries

BATTER:

1 1/4 c. all-purpose flour
1 c. sugar
1 1/2 tsp. baking powder
3/4 c. milk
1/3 c. butter
1 egg
1 tsp. vanilla

TOPPING: Melt butter and pour into a round cake pan. Sprinkle brown sugar evenly over the butter. Place one pineapple ring in center of pan. Cut other rings in half and place in circle around the center ring. Put 1 cherry in each half ring.

BATTER: Put all the ingredients into a large bowl and beat well until smooth. Pour over pineapple rings. Put cake in oven, bake 35 to 45 minutes. When baked, turn cake over into plate.
