CHOCOLATE-LACED PINEAPPLE 
1 c. pineapple juice
2 tbsp. brown sugar
2 tsp. cornstarch
1/3 c. semi-sweet chocolate pieces
2 tsp. shortening
1/2 pineapple, cored, peeled, halved lengthwise, and cut into half rings
Fresh mint (optional)

For sauce, in a saucepan, stir together pineapple juice, brown sugar, and cornstarch. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Set aside.

In a small saucepan, heat chocolate pieces and shortening until chocolate is melted, stirring constantly. Spoon pineapple sauce onto 4 dessert plates. Arrange pineapple half rings on top of sauce. Drizzle melted chocolate over pineapple and sauce. If desired, garnish with mint leaves. Makes 4 servings.
