HELEN'S SURE-FIRED PICKLING
BRINE
 
1 clean egg
2 c. pickling salt
2 gal. water

To assure a good pickling brine, put egg into bottom of bucket in water. Dissolve salt into water. Egg will float to the top when brine is ready. Add salt until egg floats. Can be used for pickles, sauerkraut, corn, beans. To meet your pickling needs, use equal amounts of salt to water to increase or decrease this recipe.
