SIMPLY DELICIOUS CHOCOLATE
MOUSSE
 
8 oz. semi sweet chocolate
3 tbsp. powdered sugar
3 tbsp. strong coffee
3 egg yolks
1 1/4 c. heavy cream

Melt the chocolate in a double boiler. Add the sugar, coffee and egg yolks, 1 at a time. Stir until mixture has thickened. Remove from heat and let cool. Whip the cream and add to the slightly cooled chocolate mixture. Spoon into individual serving dishes. Chill for at least an hour before serving. Garnish with whipped cream and a fresh strawberry.
