APPLE MUFFINS 
1 c. sugar
1/2 c. butter
1 c. milk
1 egg
1 1/2 c. flour
Dates, raisins, nuts, apricots as desired
1/8 tsp. salt
2 tsp. baking powder
1/2 tsp. cinnamon
1 tsp. lemon, grated
1 c. apples, grated

Mix in order given. Do not stir too much. Bake in greased or lined muffin pans in 425 degree oven for 20 to 25 minutes. Makes 16 to 18 muffins.

TOPPING:

1/3 c. brown sugar
1/3 c. nuts, chopped
1/2 tsp. cinnamon

Put a small amount on top of each muffin before baking.
