THE VERY BEST CHICKEN FAJITAS
EVER
 
MARINADE:

1 clove mince garlic
1 1/2 tsp. season salt
1 1/2 tsp. ground cumin
1/2 tsp. chili powder
1/2 tsp. crushed red pepper
1 tbsp. olive oil
2 tbsp. lime juice (fresh is best)
1 1/2 lbs. sliced chicken

Combine all ingredients. Marinate chicken strips for at least 2 hours.

FAJITA:

3-4 tbsp. olive oil
1/2 c. sliced onion
1/2 c. chopped green onion
1 c. sliced red bell pepper
8 warmed lg. flour tortillas
1 sliced avocado
Salsa
Sour cream
Shredded Cheddar cheese

Quickly saute onions and peppers in oil until lightly browned; remove from pan. Saute meat until well coated with glaze, about 10 minutes. Toss in the vegetables and reheat. Spoon into flour tortillas with avocado, salsa, sour cream and cheese. Can add other condiments if you want. Serves 4-6.

When we sautéd the meat, we kept the lid on and it was so juicy and flavorful! (have had tough sautéd chicken before!)

I have never commented on a recipe before. These really were absolutely outstanding! I was skeptical that they would be better than restaurant, but they really were. I am generally a person who makes modifications to recipes I find online, but I made this one as written and it was perfect. I served with homemade pico and topped with cilantro, but the marinade itself was spot on exactly as written. Well done!

Delicious! Since only cooking for one with leftovers, I mixed up the dry spices per directions and only used the amount I needed for a couple meals. I guessed on the amount of liquids I would need, turned out great. And I have the spices ready for another meal.

Oh my this was so good. Used 5 cloves of garlic tho and marinated for about 4 hours. Sauteed chicken with the peppers and onions as we prefer the veggies not to be well done. No salsa or avocado in the house (next time!) so just used lettuce tomato & sour creme all poured over a base of spicy rice in the large tortilla. Wrap and devour. So glad I found this!

Just finished making/eating/devouring these fajitas!! I love the tangy-ness of the fajitas from the lime. I added a pinch of cayenne pepper for extra spice! and 1 splash of soy sauce (which probably could have been omitted). Left the chicken whole, seared on both sides in the cast iron, and threw it in the oven for 5 minutes at 350°F. Put it back on the stove and added the peppers and onions, then laid the chicken on top of peppers/onions. So delicious. The marinade is phenomenal!!!
