BERTHA'S FRESCO MARINATED
CHICKEN FAJITAS
 
3 cups cooked chicken, cut into strips
1 1/2 tsp. finely chopped cilantro or parsley, for garnish
10 flour tortillas, warmed

MARINADE:

1/2 cup Italian dressing
1/4 cup fresh lime juice
2 cloves garlic, crushed
3/4 tsp. cumin
1/2 tsp grated lime peel
dash ground red pepper flakes
1 green pepper, chopped
1 onion, sliced
1 tomato, chopped

SUGGESTED TOPPINGS:

dairy sour cream
salsa (your favorite)
shredded cheddar cheese

In shallow baking dish, combine dressing, lime juice, garlic, cumin, lime peel and pepper flakes. Stir in chicken, green peppers, onion and tomato. Cover and marinate in refrigerator, stirring occasionally, for at least 2 hours.

Drain marinade from mixture, then stir in chopped cilantro or parsley. Serve in warmed tortillas and top, if desired, with dairy sour cream, salsa and shredded cheddar cheese.

Makes 10 fajitas.
