FRIED RICE 
2 tbsp. onion, chopped
1/2 c. cooked chicken, pork, or ham, finely chopped
2 tbsp. cooking oil
2 tbsp. soy sauce
2 tbsp. parsley, minced
1/2 c. (4 oz.) can drained mushroom stems and pieces
4 c. cold cooked rice
1 egg, well beaten
1/8 tsp. pepper

In frying pan, cook onion, mushrooms and chicken in oil until tender. Add rice and soy sauce. Cook over low heat 5 to 10 minutes, occasionally stirring with a fork. Add egg, parsley and pepper. Cook over low heat 5 minutes, stirring constantly. If desired, serve with additional soy sauce. Serves 5 to 6.
