RIE A LA GRESSE (FRIED RICE) 
2 full tablespoons oil or bacon drippings
2 tbsp. minced green onion tops
2 tbsp. minced parsley
1 sm. chopped onion
1 c. cooked rice
Black and red pepper

Select a heavy skillet. Put in the oil or bacon drippings. Saute the chopped onion in the heated oil until wilted. Add the cooked rice and fry for a few minutes. Season with black and red pepper. Turn off heat. Immediately add the minced parsley and onion tops and serve hot.
