FESTIVE SWEET POTATOES 
3 c. mashed, cooked sweet potatoes
1/2 c. sugar
1/4 c. milk
1/3 c. melted butter
1 tsp. vanilla
2 well beaten eggs
1 pinch salt

TOPPING:

1 c. flaked coconut
1 c. brown sugar
1/3 c. all-purpose flour
1/3 c. melted butter
1 c. chopped pecans

Combine first 7 ingredients. Mix well. Spoon lightly into greased 8 x 8 inch casserole. Mix topping and sprinkle over top. Bake at 375 degrees for 25 minutes. Serves 8.
