HOLIDAY FRUIT CAKE 
2 c. sifted flour
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. seedless raisins
1 c. mixed candied fruit
1 1/2 c. applesauce
1/2 c. coarsely chopped nuts
1/2 c. softened butter
1 c. sugar
1 egg
1 tsp. vanilla

Sift together flour, soda, salt and spices. Combine 1/2 cup butter with sugar and cream. Add sugar, vanilla and applesauce. Add dry ingredients gradually and mix well. Add fruit and nuts.

Pour into two small or one large loaf bread pans that have been greased and floured. Bake for 1 1/2 hours at 325 degrees. Cool, wrap in foil and store in refrigerator.
