HARVARD BEETS 
6 med. beets
1/4 c. sugar
1 tbsp. cornstarch
1/2 tsp. salt
1/4 c. vinegar
3 tbsp. butter

Wash beets. Cook in boiling water until done. Remove skins. Cut into thin slices. Mix sugar, cornstarch and salt. Add vinegar. Let sauce boil for 5 minutes, stirring constantly. Add butter. Pour over beets. Let stand for few minutes to absorb sweet - sour flavor.
