HARVARD BEETS (FOR MICROWAVE) 
1 pt. sliced beets
2 tbsp. sugar
1 tbsp. cornstarch
2 tbsp. vinegar
2 tbsp. butter

Drain beets, reserve 1/2 cup of the liquid. In a 1 quart bowl mix sugar and cornstarch. Stir in liquid, vinegar and butter microcook, uncovered, until thickened about 2 minutes, stir every 15 seconds. Stir in beets. Cook covered, until hot, about 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
