SAUSAGE/CHICKEN/VEGETABLE BAKE | |
1 to 2 lb. hot Italian sausage, sliced 4 boneless and skinless chicken breasts, cut up 2 c. potatoes, cut in chunks or crinkle cut 2 c. red and green peppers, sliced 1 c. sliced onion 1 tbsp. basil 1 tsp. oregano (optional) 1/8 c. olive oil Sauté sausage until fat is rendered out. Drain fat. Add chicken and cook 5 to 10 minutes, stirring occasionally. Place rest of ingredients in a baking pan and drizzle oil over them. Add the sausage and chicken to veggies and stir to mix. Cover with foil and bake at 350°F for 1/2 hour. Remove foil and cook another 15 minutes or until veggies are tender. Serve with crusty Italian bread and green salad. |
