GREEK VEGETABLES 
1 med. onion, chopped
1 1/2 lbs. string beans, fresh or frozen
2 ripe tomatoes, peeled, chopped
2 stalks celery, chopped
1 green pepper, diced
1/3 c. Wesson oil
1 tsp. salt
Water, enough to make 1" - 1 1/2" in bottom of pan

Bring to simmer, cover for about 10 minutes, then add 2 small sliced zucchini, 2 small sliced summer squash and 2 minutes leaves or 1 tablespoon. Continue to simmer just until string beans and zucchini are done. Tastes better the second day.
