BLUEFISH WITH VEGETABLES, GREEK
STYLE
 
3 tbsp. olive oil
1 med. onion, sliced
1 green pepper, seeded and sliced
1 red pepper, seeded and sliced
1 med. zucchini, sliced
1 garlic cloves, minced
1 med. tomato, sliced in wedges
15 pitted black olives, sliced
1 tsp. dried oregano
1 tsp. dried basil
Salt and pepper
1 1/2 lb. bluefish or any other firm, fleshed fish fillets
1/3 c. crumbled feta cheese
1/4 c. seasoned dry bread crumbs

Preheat oven to 375 degrees. Lightly oil 10 x 14 inch glass baking dish. Heat 3 tablespoons oil in heavy medium skillet over medium heat. Add next 5 ingredients and cook until onion is translucent, stirring, about 7 minutes. Stir in tomato, olives, oregano, and basil. Season with salt and pepper. Cook until tomato is softened 2 minutes. Place fish in prepared baking dish. Spoon vegetables over. Sprinkle with cheese and bread crumbs. Bake until fish is opaque, about 30 minutes.
