BOILED RAISIN CAKE OR POOR MAN'S
CAKE
 
2/3 c. shortening
2 c. raisins
1/2 tsp. salt
1 c. sugar
1 tbsp. cocoa
2 1/2 c. water
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1 c. nuts, chopped; optional

In saucepan combine shortening, raisins, salt, sugar, cocoa and water. Boil 10 minutes; cool. Sift dry ingredients and add to raisin mixture. Stir in nuts, if desired. Blend well. Pour batter into one greased and lightly floured 9 x 4 inch loaf tin plus one 5 inch baking dish. Bake at 350 degrees for 50 minutes or until cake tests done.

NOTE: There are no eggs in this recipe.
