MANDARIN TOSSED SALAD 
1 head lettuce, broken
1 c. celery, chopped
1 tbsp. parsley, minced
1 can mandarin oranges, drained

Do all of above early in day - drying lettuce and celery well and keep in refrigerator in separate containers. 4 tbsp. sugar

Caramelize almonds by adding sugar in skillet and stirring over low heat until sugar melts and collects on nuts; cool.

Combine all above ingredients and add dressing (which is already chilled) just before serving. 2 tbsp. white vinegar 1/4 c. salad oil 1/2 tsp. salt Dash of pepper

Combine and shake vigorously, shouldn't need it all.
