GERMAN POTATO SALAD 
8 boiled potatoes
1 stalk celery, diced
2 beaten eggs
1/2 c. vinegar
1/2 c. water
1/4 tsp. pepper
1 minced onion
1 tbsp. parsley, minced
1 c. sugar (less if desired)
1/4 tsp. dry mustard
1/2 tsp. salt
8 slices bacon, diced

Boil potatoes in jackets. Peel and dice. Add celery and onion. Fry bacon, add eggs, sugar, spices, vinegar and water. Stir until thickens and pour over potatoes and mix. Let stand in refrigerator several hours. Serve hot.
