9-INCH APPLE PIE 
3/4 c. sugar
1/4 tsp. nutmeg
dash of salt
2 tbsp. butter
1/4 c. flour
1/2 tsp. cinnamon
6 c. thinly-sliced pared apples

Prepare pastry. Stir together sugar, flour, nutmeg, cinnamon and salt; mix with apples. Turn into pastry-lined pie pan; dot with butter. Cover with top crust which has slits cut in; seal and flute. Cover edge with 2 (3-inch) strips of aluminum foil to prevent excessive browning. Remove foil last 15 minutes of baking.

Bake at 425°F for 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

Pie Crust:

2 c. flour
1 tsp. salt
1 c. shortening
1/4 c. milk
2 tbsp. vinegar

Bake 400°F to 425°F 10 minutes; bake at 350°F.
