GERMAN POTATO SALAD 
4 lbs. warm cooked potatoes, sliced
6 slices bacon
1/2 c. bacon drippings
1/2 c. sugar
3 tbsp. flour
2 tsp. salt
1/4 tsp. pepper
1 c. cider vinegar
1 c. water
1/4 to 1/2 c. onion, diced

Cut bacon into small pieces and brown. Remove bacon pieces from drippings. Blend sugar, flour, salt and pepper and add to drippings. Stir to make a smooth paste. Add the vinegar and water. Simmer 2 to 3 minutes, stirring constantly. Combine hot sauce, warm sliced potatoes and onions. Let stand at room temperature 3 to 4 hours. Sprinkle bacon pieces on top.

Serves 10 to 12.
