GERMAN POTATO GRIDDLE CAKES 
1/3 lb. potatoes, dehydrated, sliced
1/8 c. onions, chopped
1/4 c. milk
1 c. warm water
2 eggs, whole, beaten
1/2 c. flour, wheat, general purpose, sifted
1 1/2 tsp. salt
1/8 tsp. pepper
Dash ground nutmeg
Dash ground thyme
1 tbsp. shortening or salad oil
1/2 c. fresh sour cream

Cover potatoes and onions with water; bring to a boil; simmer 15 minutes or until soft but not mushy. Beat potato and onion mixture in mixer bowl at medium speed 2 minutes. Mix milk and eggs. Add to potato mixture. Add flour, salt, pepper, nutmeg, thyme, and melted shortening or salad oil to mixture; blend well. Drop 1/4 cup batter onto lightly greased griddle. Cook until well browned on each side. Serve with sour cream (optional).
