GERMAN POTATO SALAD 
10 med./lg. potatoes (approx. 5 lbs.)
1 med. onion, chopped
1/2 lb. bacon, cut into sm. pieces and browned
1/2 c. vinegar
1 c. hot water
1 1/2 c. sugar
6 tsp. cornstarch with enough warm water to make a runny paste

Cook potatoes with skins on, cool, peel and cut into small pieces. Add chopped onion to potatoes. Season with salt and pepper to taste.

Brown bacon until crisp (DO NOT DRAIN GREASE). Add vinegar, water and sugar to bacon/grease; heat to boiling.

Gradually add cornstarch paste to bacon mixture, stirring constantly. Cook until mixture thickens and cooks down slightly. Pour over potatoes and gently combine the two. Serve warm. Reheats well in microwave oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
