SHRIMP CREOLE 
1 med. onion, minced
2 tbsp. butter
1/2 c. chopped green pepper
1/4 c. diced celery
1 bay leaf, crushed
1 tsp. snipped parsley
1 tsp. salt
1/8 tsp. cayenne pepper
6 oz. tomato paste
2 c. water
2 c. cooked shrimp
3 c. cooked rice

Cook and stir onion in butter until tender. Stir in remaining ingredients except shrimp and rice. Cook over low heat stirring occasionally about 30 minutes. Stir in shrimp, heat through. Serve over rice.
