POTATO ZUCCHINI FRITTERS 
1 1/2 c. shredded potatoes
1 1/2 c. shredded zucchini, drained
1/4 c. chopped onions
2 tbsp. flour
2 tbsp. wheat germ, optional
1/4 c. chopped fresh parsley
1 tsp. salt
1 tsp. pepper
3 eggs, slightly beaten
2 tbsp. butter

Mix potatoes, zucchini, onions and flour. Stir remaining ingredients except butter. Melt butter in skillet over medium heat. Drop zucchini mixture by heaping tablespoons into skillet. Fry until golden brown on bottom and then turn and brown other side.
