ITALIAN BAKED PIE 
3 c. cooked rice
1/4 c. chopped pimientos
1/4 c. chopped green pepper
1/3 c. chopped onion
1/4 tsp. paprika
1 tsp. soy sauce
1 c. grated cheese
1/2 tsp. salt (optional)
1 1/2 c. cooked or canned tomatoes
1 tbsp. butter

Combine first 6 ingredients and half of cheese. Turn into buttered 1 1/2 quart baking dish and sprinkle with remaining cheese. Add salt to tomatoes and spread on rice. Dot with butter and bake in 350 degree oven for 30 minutes. Serves 4 to 6.
