CREAM OF CAULIFLOWER SOUP 
1 lg. onion, chopped (1 c.)
1 tbsp. butter
1/4 tsp. curry
4 c. broth (chicken or vegetable)
1 1/2 lb. head cauliflower, cut into flowerets
1 carrot, peeled & diced
1 c. low fat milk
Salt & pepper to taste
1/4 tsp. nutmeg
1/4 tsp. cayenne pepper
Possible garnishes: sliced green onion tops, snipped chives or dill, paprika
