ROASTED SOYBEANS 
To dry roast, cover the beans with water and soak overnight. They swell to about 3 times their size. Drain, saving the water for soup stock, then boil them for an hour in salted or unsalted water as you prefer. Single layer the partly cooked beans in a shallow pan. Bake in a preheated 350 degree oven for 30 minutes, turning them a time or two. Sprinkle with sea salt or regular salt while they are still warm if you wish.
