SPANISH SCRAMBLED EGGS 
4 oz. frozen peas
2 onions
4 eggs
1/2 tsp. celery
1/2 tsp. salt
1/2 tsp. white pepper
4 oz. grated cheese
4 oz. sliced ham
3 tbsp. butter
3 tbsp. water
2 tbsp. chopped parsley (for garnish)

Defrost peas. Cut ham into narrow strips. Finely chop onions. Saute onions in butter for 5 minutes. Add ham and peas and cook 3 minutes. Whisk together eggs, water, celery, salt and pepper. Stir in cheese and pour into pan. Cook gently stirring and turning frequently, until eggs are lightly scrambled. They should still be moist, so do not overcook. Sprinkle on parsley and serve. Serves 2.
