YVONNE'S SPINACH WITH GARLIC AND
LEMON
 
3 tsp. olive oil
4 cloves garlic, peeled and minced
16 c. spinach leaves, stemmed, washed and torn
4 tsp. fresh lemon juice
1 tsp. salt
freshly ground pepper to taste

Heat 1 teaspoon of oil in a large skillet. Add garlic and cook, stirring constantly for 20 seconds. Add spinach by handfuls, tossing the leaves in the skillet until all of it fits. Cook, stirring, for about 2 minutes. Remove from heat and toss in the remaining oil and lemon juice, salt and pepper. Divide among 4 plates and serve.

Yields 4 servings.
