CHICKEN PARMIGIANA 
6 boneless chicken breasts
1 c. bread crumbs
2 tbsp. Italian seasoning
2 eggs (slightly beaten)
2 (8 oz.) cans tomato sauce
8 oz. pkg. Mozzarella cheese
1/4 c. Parmesan cheese
Cooking oil

Dip chicken in eggs, then coat with bread crumbs and 1 tablespoon Italian seasoning. Brown in hot oil. Remove chicken and place in a baking dish.

In a bowl combine tomato sauce, remaining Italian seasoning and Parmesan cheese. Pour half of this over chicken and bake 30 minutes at 350 degrees. Top with Mozzarella cheese and bake 15 minutes longer. Heat remaining sauce and serve with rice, noodles, etc.
