CHICKEN TETRAZZINI 
2 slices bacon
1/4 cup chopped onion
1/2 cup chopped green pepper
1 cup sliced mushrooms
2 tbsp. all-purpose flour
1 cup cream
1/2 cup chicken broth
1/4 cup chopped pimento
salt and pepper, to taste
2 cups diced cooked chicken or turkey
1 (12 oz.) pkg. spaghetti, cooked according to pkg. directions
grated Parmesan cheese

Preheat oven to 350°F.

Cook bacon until crisp. Crumble. Add onion, green pepper and mushrooms to bacon fat and cook until tender. Stir in flour, chicken broth, cream and pimento. Simmer until thick. Add salt and pepper.

Combine sauce, chicken, bacon and cooked spaghetti. Pour into greased baking dish. Sprinkle with cheese.

Bake at 350°F for 30 minutes.

This is my absolute FAVORITE recipe! The only thing I do differently from the actual recipe is, I substitute freshly shredded Romano cheese for the grated Parmesan, & I use fresh sliced baby portabella mushrooms. Those two changes make a WORLD of difference! Delicious recipe!!
