SWEET POTATO SOUFFLE 
1 lb. 3 oz. can sweet potatoes, drained
1 1/4 c. sugar
2 eggs
3/4 stick soft butter
1 c. milk
1/4 tsp. nutmeg
1/2 tsp. cinnamon

TOPPING:

3/4 stick butter
1/2 c. brown sugar
1/2 c. chopped nuts
3/4 c. crushed cornflakes

Combine all ingredients with mixer. Pour into Pam sprayed baking dish. Bake at 300 degrees for 45 minutes or until firm. Add topping during last 15 minutes of baking.

For topping: Melt butter and brown sugar. Add nuts and cornflakes. Spread over top of souffle and bake 15 minutes or until crunchy.
