SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 eggs
1/2 stick butter
1/2 c. milk
1 tsp. vanilla

Mix all ingredients and pour into greased baking dish. Cover with topping.

TOPPING:

1 c. brown sugar
1/3 c. flour
1 c. nuts
1/2 stick butter, melted

Mix and sprinkle on souffle. Bake at 350 degrees for 30 minutes. Note: I don't use eggs. Add coconut to potatoes.
