SWEET POTATO SOUFFL 
2 medium sweet potatoes
1/2 stick butter, melted
2 eggs, separated
1 c. sugar
2 tsp. vanilla
1 large can evaporated milk
pinch of salt

Cook and mash potatoes. Stir in sugar, egg yolks, butter, salt and vanilla. Beat egg whites until stiff but not dry. Fold into potato mixture. Pour into 9 x 12 casserole.

Bake at 350°F about 45 minutes.

Serves 8. Can do ahead.
