SNOW PEA AND CARROT 
2 c. fresh snow peas, cut diagonally
2 carrots, cut in thin rounds

DRESSING:

1 tbsp. lemon juice
3 tbsp. sesame oil
1 tsp. soy sauce
1 tbsp. sunflower seeds
1/2 tsp. chopped mint

Simmer both vegetables in a little water until barely done. Add the dressing and serve hot or cold.
