ZUCCHINI BREAD | |
2 eggs 1 c. oil 2 c. sugar 2 tsp. vanilla 2 c. zucchini, shredded 1 can (8 oz.) crushed pineapple, drained 3 c. flour 2 tsp. baking soda 3/4 tsp. baking powder 1/2 tsp. salt 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. chopped nuts Mix all ingredients together. You may add chopped cherries or raisins if desired. Put in bread loaf pans (greased). Bake in oven for 25 minutes or until done. Makes 2 loaves. Bake at 350 degrees. |
