ZUCCHINI-LEMON BREAD 
3 c. all-purpose flour
1 1/2 c. sugar
1 c. walnuts, chopped
4 1/2 tsp. baking powder
1 tsp. salt
4 eggs, beaten slightly
2/3 c. vegetable oil
2 c. grated zucchini
2 tsp. grated lemon peel

Combine flour, sugar, walnuts, baking powder, and salt in large mixing bowl. Mix together eggs, vegetable oil, zucchini, and lemon peel. Add moist ingredients to dry ingredients. Mix until moistened. Batter is thick. Pour into 2 loaf pans which have been greased. Bake 1 hour at 350 degrees or until toothpick comes out clean.
