SHELBY'S ZUCCHINI BREAD 
1 1/2 cups all-purpose flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. nutmeg
1 egg
1 cup sugar
1 cup grated zucchini
1/4 cup vegetable oil
1/4 tsp. lemon zest
chopped walnuts (optional)

In a small bowl combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg.

In a medium bowl combine egg, sugar, zucchini, vegetable oil, lemon zest, and walnuts (if using).

Let the wet ingredients sit for about 10 minutes to soak in, then stir in the dry ingredients.

Preheat the oven to 350°F. Butter a bread pan and put the zucchini bread batter in the pan.

Bake at 350°F for about 55 minutes.
