SALMON SKIPPERS 
To stretch a can of salmon make these salmon patties and serve atop cranberry slices. Delicious!

1 (14 oz.) can jellied cranberry sauce

PATTIES:

2 cups canned salmon
2 eggs, well-beaten
1 tbsp. minced onion
1 tbsp. chopped green pepper
1 tbsp. chopped parsley (optional)
1/4 tsp. salt
dash pepper

Pick over and flake salmon. Combine with other ingredients. Season with salt and pepper. Shape into 8 to 10 cakes. Coat with flour and brown quickly on both sides in hot frying pan containing enough fat to cover bottom generously.

Lift out patties and place each on a slice of cranberry sauce.

Makes 8 to 10 patties.
