BROILED SALMON WITH BASIL 
2 tbsp. olive oil
1 clove minced garlic
1/4 c. white wine
2 tbsp. lemon juice
1 c. fresh basil (or 1/2 c. parsley & 2 tbsp. dried basil)
1/4 c. grated Parmesan cheese
1/2 tsp. Dijon mustard
4 salmon steaks, approx. 1 1/4-1 1/2 lb. fish
Dash cayenne pepper

Sauce: Put all ingredients except fish and cayenne pepper in blender. Blend until herbs are fine. Put 1/4 of sauce in bottom of baking dish. Mound rest of sauce over fish. Broil until done.

Quick, easy! I liked a bit more parmesan. AA members can lose the wine, still delicious! Sauce seemed enough for half the salmon listed above, doubling wouldn't hurt. Osh is selling Italian Parsley & Italian basil in California for herb garden, more substantial & flavorful. My Dash cayenne pepper is waiting for its instructions!

I agree with the other poster -- a little more Parmesan, and doubling the recipe wouldn't hurt. Might not need quite double the sauce overall, but the recipe as written was pretty skimpy for 1-1/2 lbs of salmon. Very good, light herbal flavor. We tried limes instead of lemons once -- I'd probably stick with the lemons. I'd probably choose a pretty heavy white wine too, like a Riesling that isn't too sweet, or a dry Semillon. The basil tends to overpower the wine notes otherwise.
