MINI-CHEESECAKES 
16 oz. cream cheese
1 tsp. vanilla
2 eggs
3/4 c. sugar
18 vanilla wafers
1 can pie filling (cherry is good)

You will need 18 cupcake cups.

Combine cream cheese, vanilla, eggs and sugar. Line muffin tin with cups. Put vanilla wafer in bottom of each cup. Put cream cheese mixture to 3/4 full in each cup.

Bake at 350°F for 15 minutes. Cool. Put 1 tablespoon of pie filling on top of each "cheesecake".
