PUMPKIN PIE CAKE | |
3 eggs beaten 2-16 oz. cans of pumpkin 1-12 oz. can evaporated milk 1 c. sugar 1/2 tsp. salt 4 tsp. pumpkin pie spice 1 box yellow cake mix 3/4 c. butter (softened) 1/2 c. chopped nuts whipped topping (optional) Mix the first 6 ingredients in a large bowl. Pour into a greased 3 quart casserole dish. Cut the butter into the dry cake mix until crumbly. Mix nuts into the cake mix. Sprinkle mixture on top of pumpkin mix. Bake in 350 oven for 45 minutes - 1 hour. Serve with cool whip or whipped topping. |
