MINCE PIES 
2 1/2 c. all purpose flour
1 c. sugar
1/2 c. shortening
2 tbsp. water
1 tsp. baking powder
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. ground nutmeg
2 eggs
1 (28 oz.) jar mincemeat

Preheat oven to 400 degrees.

Combine first 9 ingredients to make pastry. Roll out to about 1/8 inch thick. Cut into rounds and place in muffin tin. Spoon a little mincemeat into each pastry shell and then top with a smaller round of pastry, crimp edges of pastry together and trim excess.

Bake in middle of oven for 10 to 12 minutes. When cool, remove and lightly dust with powdered sugar. Often served with whipped cream.
