HOLIDAY MINCE PIE 
1 (18 oz.) jar prepared mincemeat (2 c.)
1 1/2 c. coarsely chopped walnuts
2 lg. apples, cored and diced
1/2 c. packed brown sugar
1/4 c. brandy or rum (optional)
1 tbsp. lemon juice
Pastry for one 2-crust, 10 inch pie

In medium bowl, stir first 6 ingredients until well mixed. Cover and refrigerate overnight to allow flavors to blend.

About 3 hours before serving, roll out pastry and line 10 inch plate. Preheat oven to 425 degrees. Fill with undrained mincemeat mixture. Cover with top crust. Bake 15 minutes. Lower temperature to 350 degrees and bake 15 to 20 minutes longer until golden. Serve warm.
