FIESTA CASSEROLE 
1 1/2 lbs. ground meat, beef or pork
1 envelope taco seasoning, 1/2 c. water
1 pkg. Martha White yellow rice dinner
1 lb. Velveeta cheese
1 can Rotel tomatoes with green chilies
Lettuce, tomatoes and onions, chopped
Dorito chips, crushed

Brown meat, drain. Add taco seasoning and water. Simmer 5 to 10 minutes. Prepare rice according to package directions.

Melt Velveeta, add Rotel tomatoes and mix well. Combine meat, rice and cheese dip. Pour into 9 x 13 inch Pyrex dish.

Top casserole with Dorito chips and bake in a 400 degree oven for 15 minutes or until bubbly. Garnish with a ring of lettuce, tomatoes and onions around outside of dish.
