FIESTA CASSEROLE 
1 lb. ground beef
1 pkg. (1 1/4 oz.) taco seasoning mix
1 can (16 oz.) refried beans
1 can Nacho cheese soup
1 c. (4 oz.) Monterey Jack cheese
1/2 c. pitted black olives, sliced
1 c. sour cream
Round corn tortilla chips
2 green onions, minced

In a microwave safe 2 quart casserole dish, cook meat on high for 5 minutes, stirring after 2 minutes, drain fat. Place meat in bowl, add seasoning mix, stir well. In bottom of casserole dish spread beans and cover with beef mixture. Pour soup over meat to within 1 inch of edge of dish. Sprinkle with cheese and olives. Cook on high for 15 minutes or until cheese melts an mixture bubbles. Place sour cream over cheese at one side of dish. Sprinkle with green onions, serve with chips.

Since microwave ovens vary in power, you may need to adjust your cooking time.
